Tolstoy is a new tech-driven plant-based restaurant franchise from Austria. Its first restaurant is located in the heart of Vienna next to the Naschmarkt, a well-known old market with vintage stalls and restaurants from all over the world. Tolstoy is reflecting this international culture in its concept, with dishes on its menu ranging from Ukrainian Borscht to Mexican Chili sin Carne and Italian Pinsa Romana.
