Olivia is a half-Argentinian / half-Austrian plant-based chef who grew up as a citizen of the world — from Australia to the U.S. This helped her create an international menu for Tolstoy, inspired by diverse culinary traditions. She received her formal schooling as a cook at the Institute of Culinary Education in New York. Before joining Tolstoy, she was working in Manhattan under the supervision of Chef Dan Kluger at his restaurant, Loring Place.
